折箩最早是北京特色。听人说是满清时候一个王爷，小时候吃不饱饭(满清王府养孩子都是饿着，越病越饿，说都是富贵病，饿饿就好了)，王府的厨子可怜他，每天晚上偷着给他把府上的剩菜炒了吃。王爷长大了也好这口，派下人专门去各大酒楼花钱买剩菜，回来炒成一锅。后来就成了折箩。

大多数是脚夫苦力们吃得泔水下水，折箩炒肝这种，要不就是豆汁儿胶圈，都不是啥富贵人吃的。事实上全球化之前全国各地芝麻仁都吃这种泔水一样的东西，但是百京因为地位特殊这些陋习反而被奉为圭臬作为民俗文化流传下来了。泔水民俗被保留下来的除了百京之外就是川渝火锅辣油烫下水，江湖菜“盐多油多香精味精起坨坨”，也是衣逼船夫吃的，这种东西在全国推广开来可见芝麻仁的衣逼审美。 不过百京确实也没啥能拿得出手的吃食，百京自古就是芝麻的北疆，是个边塞城市，“幽燕苦寒”，处在农耕区的边界，农耕物产比不了南，牛羊比不了北，还没有东百那种黑土地和生长山珍的环境，长期只能靠吸血江南，通过运河才能养得起那么多人口。属实是芝麻中的芝麻。
